Here is a recipe for making an Asian fish rice bowl with bok choy:

Ingredients:

  • 1 pound white fish fillet, such as cod, halibut, or tilapia
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped bok choy
  • 1/2 cup cooked rice
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, garlic powder, and black pepper.
  3. Place the fish fillet in a baking dish and pour the marinade over it.
  4. Marinate the fish for at least 30 minutes, or up to overnight.
  5. Remove the fish from the marinade and discard the marinade.
  6. Place the fish fillet in the oven and bake for 15-20 minutes, or until cooked through.
  7. While the fish is cooking, heat a large skillet over medium heat.
  8. Add the bok choy to the skillet and cook for 2-3 minutes, or until wilted.
  9. Remove the fish from the oven and flake it with a fork.
  10. To assemble the rice bowls, divide the rice between 4 bowls.
  11. Top the rice with the fish, bok choy, and sesame seeds (if using).
  12. Serve immediately.

Tips:

  • You can use any type of white fish for this recipe.
  • If you don't have bok choy, you can use any type of leafy green vegetable, such as spinach, kale, or collard greens.
  • To make the rice bowls ahead of time, cook the rice and fish as directed. Then, assemble the bowls and refrigerate for up to 24 hours. When you're ready to serve, heat the rice bowls in the microwave for 1-2 minutes, or until heated through.

Enjoy!
