Here is a recipe for Bisquick Chicken and Dumplings:

Ingredients:

  • 1 cup Bisquick Original Pancake & Baking Mix
  • 1/2 cup milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup frozen peas

Instructions:

  1. In a medium bowl, combine the Bisquick, milk, chicken broth, salt, and pepper. Stir until just combined.
  2. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides.
  3. Add the onion and celery to the pot and cook until softened.
  4. Add the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  5. Drop the dumpling batter by spoonfuls into the simmering broth. Cover and cook for 15 minutes, or until the dumplings are cooked through.
  6. Stir in the peas and cook for 1 minute more.
  7. Serve hot.

Tips:

  • For a richer flavor, use half chicken broth and half milk.
  • If you don't have Bisquick, you can use self-rising flour or a combination of all-purpose flour and baking powder.
  • To make the dumplings ahead of time, mix all of the ingredients together and then drop the batter by spoonfuls onto a baking sheet lined with parchment paper. Freeze the dumplings for up to 1 month. When you're ready to cook, thaw the dumplings in the refrigerator overnight and then follow the instructions above.
  • Serve the chicken and dumplings with your favorite sides, such as mashed potatoes, green beans, or a salad.
