Ingredients:
- 1 cup Bisquick Original Pancake & Baking Mix
- 1/2 cup milk
- 1/2 cup chicken broth
- 1/2 teaspoon salt

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup frozen peas
Instructions:
- In a medium bowl, combine the Bisquick, milk, chicken broth, salt, and pepper. Stir until just combined.
- Heat 1 tablespoon olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides.
- Add the onion and celery to the pot and cook until softened.
- Add the chicken broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
- Drop the dumpling batter by spoonfuls into the simmering broth. Cover and cook for 15 minutes, or until the dumplings are cooked through.

Tips:
- For a richer flavor, use half chicken broth and half milk.
- If you don't have Bisquick, you can use self-rising flour or a combination of all-purpose flour and baking powder.
