Here is a recipe for Cajun Honey Chicken Bowls:
Ingredients:
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/3 cup honey
- 1/3 cup orange juice
- 2 tablespoons brown sugar
- 3 tablespoons Dijon mustard
- 1 tablespoon yellow mustard
- 3/4 tablespoon Cajun seasoning
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 red bell pepper, sliced
- 1 jalapeño pepper, sliced (optional)
- 1/2 cup cooked rice
- 1/4 cup chopped green onions
- Lime wedges, for garnish (optional)
Instructions:
- In a large bowl, combine the honey, orange juice, brown sugar, Dijon mustard, yellow mustard, Cajun seasoning, garlic, salt, and pepper. Add the chicken and toss to coat.
- Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium heat. Add the chicken and cook until browned on all sides.
- Transfer the chicken to a baking dish and bake for 15-20 minutes, or until cooked through.
- While the chicken is baking, heat the red pepper and jalapeño peppers (if using) in the same skillet over medium heat. Cook until softened, about 5 minutes.
- To assemble the bowls, divide the rice, chicken, red pepper, and jalapeño peppers (if using) among 4 bowls. Drizzle with the sauce from the marinade. Garnish with green onions and lime wedges (if using).
- Serve immediately.
Tips:
- For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper.
- If you don't have Cajun seasoning, you can substitute a mixture of 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder.
- To make the chicken ahead of time, cook it through and then store it in the refrigerator for up to 24 hours. When you're ready to serve, reheat the chicken in the oven or on the stovetop.
- Enjoy!
