Here is a recipe for homemade crispy egg rolls that is easy to make:
Ingredients:
- 1 pound ground pork
- 1/2 onion, chopped
- 1 carrot, shredded
- 1 cup cabbage, shredded
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 egg roll wrappers
- Oil for frying
Instructions:
- In a large skillet, brown the ground pork over medium heat. Drain off any excess fat.
- Add the onion and carrot to the skillet and cook until softened about 5 minutes.
- Add the cabbage, soy sauce, sesame oil, salt, and pepper to the skillet and cook until heated through, about 2 minutes.
- To assemble the egg rolls, place a wrapper in front of you with one corner pointing towards you. Place about 2 tablespoons of the filling in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling. Then, fold in the sides of the wrapper. Finally, roll the wrapper up tightly, starting from the bottom corner.
- Repeat steps 4-5 with the remaining wrappers and filling.

Tips:
- For a spicier filling, add 1/2 teaspoon of chili powder to the skillet along with the onion and carrot.
- If you don't have egg roll wrappers, you can substitute wonton wrappers.
- To make the egg rolls ahead of time, assemble them up to the point of frying. Cover and refrigerate for up to 24 hours. When you're ready to fry, remove the egg rolls from the refrigerator and let them sit at room temperature for 30 minutes before frying.
