Here is a recipe for easily stuffed flank steak pinwheels:
Ingredients:
1 (1-pound) flank steak, trimmed and thinly sliced
1/2 cup crumbled feta cheese
1/2 cup chopped spinach
1/4 cup chopped red onion
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
Instructions:
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, combine feta cheese, spinach, red onion, olive oil, salt, pepper, garlic powder, paprika, and cayenne pepper.
Spread the feta cheese mixture evenly over the flank steak.
Starting at one end, roll up the steak tightly.
Secure the roll with toothpicks or kitchen twine.
Place the rolled steak in a baking dish.
Bake in preheated oven for 20-25 minutes, or until the steak is cooked to desired doneness.
Let the steak rest for 5 minutes before slicing and serving.
Tips:
For a more flavorful steak, marinate the steak in your favorite marinade for at least 30 minutes, or up to 24 hours.
If you don't have feta cheese, you can use any type of cheese that you like.
You can also add other ingredients to the filling, such as chopped mushrooms, sun-dried tomatoes, or roasted red peppers.
To make the pinwheels ahead of time, assemble them up to step 6 and then refrigerate for up to 24 hours before baking. When you're ready to bake, simply remove the pinwheels from the refrigerator and bake as directed.
