Ingredients:

  • 1 pound rotini pasta
  • 1/2 cup butter
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounces) can of diced tomatoes, undrained
  • 1 (10.75 ounces) can of condensed cream of mushroom soup
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Cook the pasta according to the package directions. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Add the onion and garlic and cook until softened about 5 minutes.
  3. Add the Italian seasoning, salt, and pepper. Stir to combine.
  4. Add the diced tomatoes and cream of mushroom soup. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Remove from the heat and stir in the mozzarella cheese and Parmesan cheese until melted.
