Ingredients:

Instructions:

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a shallow dish, combine the flour, salt, and pepper.
  3. In another shallow dish, whisk together the cornmeal, egg, and milk.
  4. Dip the fish fillets in the flour mixture, then the egg mixture, then the cornmeal mixture.
  5. Heat the oil in a large skillet over medium heat.
  6. Cook the fish fillets for 2-3 minutes per side, or until golden brown and cooked through.
  7. To assemble the burritos, spread a tortilla with some of the shredded cheese.
